1/4 C. red wine vinegar
1 shallot, minced
2 t. minced fresh thyme
3/4 C. extra virgin olive oil
salt and freshly ground pepper, to taste
In a medium bowl, whisk together vinegar, shallot and thyme. Add olive oil in a
slow, steady stream, whisking constantly. Season with salt and pepper.
Makes about 1 cup.
Note: This is as basic as they come. substitute any herb you like for the thyme.
Honey Herb Vinaigrette
6 T. olive oil
1/4 C. fresh lemon juice
2 T. honey
1/2 t. Dijon mustard
1/2 t. minced fresh garlic
1/2 t. minced fresh chives or tarragon
1/2 t. minced fresh parsley
1/4 t. salt
1/8 t. pepper
In shaker jar or small bowl, whisk together oil, lemon juice, honey and mustard.
Add garlic, chives or tarragon, parsley, salt and pepper.
Let stand 20 minutes before using.
