Most gelatins set firmly after 3 - 4
hours in the refrigerator. To be on the safe side allow 6 hours or overnight.
Gelatins that set slowly in the refrigerator are sturdier than those that are
quick set. If you need to hasten the chilling process, make the gelatin the
normal way. Set the gelatin bowl over another bowl of ice and stir until the
gelatin thickens. |

Strawberry Pretzel Salad
2 C. crushed pretzels
3 T. sugar
3/4 C. butter melted
8 oz. cream cheese
1/2 C. confectionary sugar
1 (12 oz) package frozen whipped topping
2 C. miniature marshmallows
1 (6 oz.) package strawberry gelatin
2 1/2 C. boiling water
1 10 oz. package frozen strawberries
Mix first 3 ingredients in a 9 x 13 pan. Bake at 350°F. for 15 minutes. Cool.
Cream softened cream cheese and add confectionary sugar. Fold topping mixture
into cream cheese. Add the marshmallows. Spread over baked crust.
Dissolve gelatin in water. Stir in strawberries. Chill until slightly thickened.
Spread over cheese layer and chill.
Variation: Use lime gelatin and pineapple pie filling.
