Porcini - Found throughout the woodlands of Italy and Northern Europe, these mushrooms are known for their woodsy and aromatic scent - a wonderful addition to risotto, pasta, meats, chicken or wild game dishes.

Crock Pot Steak Roll Ups

1 1/2 lb. round steak

Cut steak into 3 x 4 pieces. Pound steaks to 1/4 inch thickness.

Filling:

1/4 C. pine nuts

1 clove garlic minced

2 T. fresh parsley

2 T. fresh basil

1 T. oil

Combine all ingredients in a small bowl and set aside.

6 slices proscuitto

1 C. beef broth

1 oz. dried porcini mushrooms

1/2 C. dry red wine

To assemble:

Place a slice of proscuitto on each piece of the beef. Spoon about 1 T. of the filling on each one. Roll up like a jellyroll and tie each one. Place on the bottom of the crock pot. Heat broth to boiling and pour over the mushrooms. Add to pot with wine.

Cook on low 6 - 7 hours. Remove meat from pot and cover to keep warm. Turn pot on high and add:

2 T. cornstarch

1/4 C. water

Stir into liquid and cover pot. Cook another 15 minutes. Spoon over roll ups.
