Bean Tips When Making Soup

When using dried beans, make sure to sort thru them, to remove any stones or lumps of dirt that may be in them. Rinse well with cold water.

Soaking dried beans softens them and helps to remove gassiness. You can soak them overnight, in a microwave or by what is called the quick soak.
