Grades of Beef
Prime is the highest grade of beef. It
is produced in smaller quantities than the other grades and most of it goes to
top restaurants and hotels.
Choice is what we mostly find at our supermarkets. It is the most popular grade
for overall consumption.
Select is a step lower and makes up the rest of the supermarket selection. It
may be sold under a house name.
