Diabetic Apple Cinnamon Muffins
1-1/4 cup oat bran cereal; uncooked
1 cup whole wheat flour
2 tsp ground cinnamon
1 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
3/4 cup unsweetened applesauce
1 cup apple, peeled, cored, diced
1/2 cup honey
1/2 cup vegetable oil
1 tsp pure vanilla extract
Preheat oven to 375° F. Coat 12 medium-size cups with vegetables oil or line
with paper baking cups.
