My grandmother always
made a big bowl of caramel corn at Halloween. I think it's a wonderful
treat to have around when you're trimming the tree or watching "Miracle
on 34th Street". |

Caramelcorn
8-12 C. popcorn in a big bowl
Caramel mixture:
3/4 C. butter
3/4 C. light brown sugar
1/4 C. honey
1/2 C. corn syrup
3/8 t. baking soda
1/2 t. vanilla
Melt butter in a medium saucepan, then add the brown sugar, honey, baking soda
and vanilla. Stir until the mixture comes to a boil. Boil gently without
stirring until mixture reaches 265°F.
Preheat oven to 250°F.
Slowly pour syrup over popcorn. Stir and toss. Place on parchment lined baking
sheet and place in oven. Toss popcorn on tray about every 15 minutes for 45
minutes.
Cool and break into pieces. Store in plastic bags.
