Quick Chocolate Caramels
3 cups sugar
1/2 cup butter
1 cup milk
1 square baking chocolate (1-oz), melted
1 Tbsp vanilla
Butter an 8-inch square pan.
Combine sugar, butter, milk and melted chocolate together in
a heavy saucepan.
Cook and stir constantly until temperature reaches 246° on
the candy thermometer (firm ball stage).
Remove from heat. Beat mixture until cool. Add vanilla.
Pour into pan. Cut into 1-inch squares.
Makes 64 pieces
