Cranberry Pecan Cups
1 (3oz) pkg
1/2 c butter
1 c flour
3/4 c brown sugar
1 tsp vanilla
1/3 c finely chopped fresh cranberries
3 T chopped pecans
Blend cheese and butter. Stir in flour. Chill one hour.
Shape into 24 balls.
Place in ungreased 1 3/4" muffin pans. Press dough evenly against bottom and
sides of each.
Beat together egg, sugar, vanilla, and dash of salt just till
smooth. Stir in cranberries and pecans. Spoon into pastry lined muffin cups.
Bake 325° 30-35 minutes. Cool in pans.
