Maple Candy Roll Recipe

Maple Candy Roll

1 to 2 cups pecans (divided use)
1/3 cup margarine, softened
1/3 cup Karo light corn syrup
1 tsp maple flavoring
1/2 tsp salt
1 lb box powdered sugar, sifted

Chop 1/2 cup of the nuts finely. Coarsely chop the remaining 1-1/2 cups of pecans.

Mix together margarine, corn syrup, maple flavoring and salt. Add powdered sugar all at once, mix thoroughly. Knead until smooth.

Knead in the 1/2 cup finely chopped nuts. Shape mixture into two rolls, two inches thick; brush with additional corn syrup and roll in coarsely chopped nuts. Wrap in plastic wrap then chill. Slice into 1/4-inch pieces before serving.
