Microwave Peanut Brittle 1 cup sugar
1/2 cup light corn syrup
1 1/4 cup raw peanuts
1/4 tsp. salt
1 Tbsp. vanilla
1 Tbsp. soda
1 Tbsp. butter
Combine sugar, syrup, and peanuts and salt in 3 qt deep casserole. Mix well.
Microwave on high for 7 1/2 to 9 1/2 minutes or until mixture reaches hard crack
stage (300 degrees). Stir in soda and pour into buttered cookie sheet, spreading
thinly and let cool. Break into pieces.
