Mixed Nut Brittle
2 Cups granulated
sugar
1 Cup light corn syrup
1 Cup water
2 Cups mixed nuts (break big nuts in small pieces)
1 T. margarine
1 t. vanilla
1 t. baking soda
Generously butter 2 cookie sheets.
In large saucepan combine sugar, corn syrup & water. Cook
until sugar dissolves, stirring constantly. Continue cooking until candy
thermometer reaches 300 degrees (hard-crack stage) stirring occasionally.
Stir in margarine & mixed nuts. Remove from heat & stir in
vanilla & soda.
Pour onto prepared cookie sheets, spread as thin as possible.
When completely cool, break into pieces. Store in airtight
container in cool, dry place.
Makes 2 lbs.
