These are like pecan pie, only
in cookie form. Have you ever tried a Christmas Cookie Swap? Here are
some tips to help you have a successful one.
1. Invite 4-10 guests. Remember that the more guests the greater variety
of cookies but it also means you have to bake more cookies.
2. Ask participants to bake 1 dozen cookies for every guest attending.
3. Have guests bring containers to take their cookies home in.
4. Ask everyone to attach the recipe to their cookie.
5. Set the date early before the holiday season gets to hectic. |

Pecan Diamonds
Crust:
2/3 C. confectioner's sugar
2 C. flour
1/2 lb. butter - softened
Blend flour and sugar together. Cut in flour until fine crumbs form. Bake at
350°F. for 20 minutes in a 9 x 12 inch pan.
Filling:
2/3 C. melted butter
1/2 C. honey
3 T. cream
1/2 C. brown sugar
3 1/2 C. pecans - coarsely chopped
Mix butter, honey, cream and brown sugar together. Add pecans. Spread over
crust. Bake 25 minutes more. Cool and cut into diamonds.
