When I start baking Christmas
cookies, this is the first one I make. These are my dad's favorite and
the ones we used to leave for Santa.
Mom has retired from the Christmas cookie baking. My brother Richard
makes some of them now. My sister and I do the rest. She has made sure
that we all do them exactly like she would. Mom, you taught us well! |

Sandies
Cream:
1 C. shortening
1/4 C. confectioner's sugar
Add:
2 t. vanilla
1 T. water
2 C. flour
1/2 C. chopped walnuts
Mix well.
Roll into a shape like a pecan. Bake at 325 degrees F. 10-12 minutes until
bottoms are lightly browned. Quickly transfer to rack with wax paper under it.
Have confectioner's sugar in a sifter and sprinkle over cookies. Dip bottoms in
confectioner's sugar. Place cookies back on rack and lightly sift again.
Cool.
You can roll these in the sugar instead of the sifter if you like, you'll use
less sugar but over the years I found that it works better for me to use the
sifter and they look nicer.
