This recipe comes from my
friend, Becki. You are indeed lucky if you are on her cookie list at
Christmas. She bakes many different varieties of cookies, but these are
my favorites.
When she sent me the recipe, she enclosed this note, "try not to eat
them all". I want you to know that won't be easy.
This recipe easily doubles. |

Pecan Tartlets
Shell:
1/2 C. butter
1/2 C. sugar
1 egg
1 t. almond extract
1 3/4 C. flour
Mix butter and sugar together. Add egg and almond extract. Mix in flour.
Divide dough into 24 equal pieces. Press each into the bottom and up the sides
of a mini muffin pan.
Bake at 350°F. for 10 minutes until lightly brown.
Filling:
1 C. confectioner's sugar
1/3 C. corn syrup
1/2 C. butter
1 C. chopped pecans
Mix ingredients in a medium saucepan. Bring to boil and cook for 1 minute. Fill
shells.
Top with a pecan half.
Bake at 350°F. for 5 minutes. Cool in pan for 1 minute. Remove tarts from pan
and cool on a rack.
Makes 24.
