Caramel Apple Nut Cake
CAKE
1 3/4 cups flour
1 1/2 cups firmly packed brown sugar
1/2 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 teaspoons cinnamon
1 teaspoon vanilla
3/4 cup butter, softened
3 eggs
1 1/2 cups finely chopped peeled apples
1/2 cup chopped nuts
FROSTING:
2 cups powdered sugar
1/4 teaspoon cinnamon
1/4 cup butter, melted
1/2 teaspoon vanilla
4 teaspoons milk
Heat oven to 350ºF. Grease and flour a 13x9 inch pan.
In large bowl, combine flour, sugar, salt, baking powder, 1
1/2 tsp cinnamon, 1 tsp vanilla, 3/4 c. butter and eggs; beat 3 minutes at
medium speed.
Stir in apples and nuts.
Pour batter into greased and floured pans.
Bake at 350ºF for 30-40 minutes until toothpick inserted in
center comes out clean. Cool completely.
In small bowl, blend all frosting ingredients, adding enough
milk for desired spreading consistency. Spread over cooled cake.
