Try one of our Mexican recipes from the
Tex-Mex Cafe. Some of the recipes are burritos, tacos, quesadillas, fajitas,
enchilada and chili recipes.
8 (6- to 7-inch) flour
3 boneless, skinless chicken breast halves (about 12 oz.)
1/2 C. barbecue sauce, any flavor
1/2 C. chopped green pepper
1/4 C. chopped onion
1 C. Cheddar and Monterey Jack cheese, shredded
Preheat oven to 425° F.
Cut chicken breast into strips and sauté in a nonstick skillet until cooked.
Place cooked chicken in a mixing bowl. Add barbecue sauce, peppers and onions.
Line cookie sheet with 4 flour tortillas. Divide mixture evenly and spread over
4 tortillas. Sprinkle each with shredded cheese. Top each one off with another
tortilla. Spray each tortilla with cooking spray.
Bake 8 to 10 minutes. Cool 5 minutes. Serve.
