Chipotle Puree
Buy a can of high quality chipotles en abodo and puree in a blender. Store
covered in the refrigerator.
These are chilies that are marinated in a saucy paste of vinegar and spices.
If you've ever wondered why you can't get that restaurant taste at home, try
this sauce. |

Fiesta Meatloaf
2 lbs. ground beef
1/4 lb. chorizo sausage ground
3/4 C. diced onion
1/2 C. green pepper diced
1 4 oz. can chilies
3 garlic cloves minced
1/2 t. ground cumin
1 1/2 C. dry breadcrumbs
2 eggs
1/4 C. ketchup
2 T. chipotle puree
salt and pepper to taste
1/4 C. milk
Mix all ingredients together. Grease a baking dish. Form into a loaf. Spread on
topping. Bake for 1 hour at 350°F.
Topping:
1/4 C. ketchup
2 T. chipotle puree
Mix together.
