Pork on Adobo
10 guajillo chiles
5 ancho chiles
1/2 small white onion
3 garlic cloves
2 tbsp vegetable oil
2 cups chicken stock or water
1 lb pork butt de-boned
salt to taste
Open chiles and take seeds and veins out. On a hot skillet, press chiles to
roast along with garlic. Remove chiles and garlic from heat.
Soak chiles in hot water for 15 minutes. Remove from water and
place in blender along with the garlic and onion. Blend thoroughly. Strain
mixture into a hot pot with oil. Let mixture cook for 10 minutes on high heat or
until taste of the garlic is not present. Add 2 cups chicken stock or water to
mixture.
Add pork in 2 inch squares. Let cook for 30 minutes on stove or
until pork is tender.
