Slow Cooker Fajitas
2 lbs. London broil
1 pkg. (1.27 oz.) fajita seasoning
1 tablespoon vinegar
1 can (4 oz.) green chilies
1 chopped onion
1 red pepper, cut in thin strips
1 green pepper, cut in thin strips
8-10 tortilla shells
1 cup shredded cheddar cheese
1 cup sour cream
Salsa to taste
Rub meat all over with seasoning, put in bottom of slow cooker, add vinegar and
chilies, and top with onion and peppers. Cook on low 8 hours, shredding meat
when done. Serve with warm tortillas, shredded cheese, sour cream and salsa.
Makes 8-10 servings.
