Italian Seafood Alfredo
Half a pound boiled fettucini noodles (boil 12 minutes in water
with teaspoon salt and teaspoon oil)
One t. chopped garlic
One t. chopped basil
One T. nonfat margarine
6 oz. nonfat sour cream
5 oz. romano cheese
1/2 te. salt
1/2 t. pepper
4 oz. of scallops
4 oz. of bay shrimp
1/8 C. sherry
For the alfredo sauce, mix your margarine, garlic, basil, salt, pepper, sour
cream, romano cheese in a sauce pan. Stir on high heat until smooth.
Saute the seafood in a separate pan with a teaspoon of margarine and 1/2
teaspoon garlic, 1/2 teaspoon salt, 1/2 teaspoon pepper, 1/8 sherry cooking
Stir for 3 minutes on high heat, then pour it into the pan with your alfredo
Simmer for 4 minutes on low heat. Then put fettucini noodles into the pan, mix
well and serve.
