Sauce
1 28 oz. can crushed tomatoes
1 medium onion chopped
1 garlic clove minced
1/3 C. olive oil
1/4 t. oregano
1/2 t. basil
1 t. sugar
1/4 t. garlic salt
4 T. Romano cheese
salt and pepper to taste
Heat the oil in a skillet and add garlic and onion. Cook for 2 - 3 minutes. Add
tomatoes and all the spices. Cook for 30 minutes.

Meat Stuffed Zucchini
2 zucchini (about 1 lb. each)
1 lb. ground round steak
1/2 C. bread crumbs
1/2 small onion finely chopped
1 large garlic clove minced
1/2 C. grated Romano cheese
3 large basil leaves crushed
1 egg
1/2 t. salt
1/2 t. black pepper
1/2 t. garlic salt
Cut the ends off the zucchini and cut into 3 pieces. Put them into lightly
salted boiling water and cook for 5 minutes. Cut each piece in half and scoop
out the seeds and set in a oiled baking pan that will hold the 12 pieces flat on
the bottom.
Heat 2 T. oil in a skillet and saute the onion for 3 minutes. Place the bread
crumbs, garlic, cheese, basil, egg, pepper and salt in a bowl. Mix and combine
it. Add the onion and ground beef. Mix well and shape into 12 pieces that will
fit inside the zucchini's. Bake for 25 minutes in a 400°F. oven. Cover with the
sauce and bake another 10 minutes. Sprinkle with additional cheese if desired.
