  • ½ teaspoon black pepper
  • 1 teaspoon sugar
  • ½ cup fresh basil, chopped
  • 1 tablespoon olive oil (for drizzling)

Cheese and Dairy Components:

  • 1 pound cottage cheese
  • 2 cups mozzarella cheese, chopped into ¼ inch cubes
  • 1½ cups Parmesan cheese, grated
  • 2 large eggs, lightly beaten
  • 1 cup heavy cream, cold
  • 1 teaspoon cornstarch

Instructions

  1. Position the oven rack to the middle and preheat to 375°F (190°C). Coat a 9×13 inch (23×33 centimeter) baking dish with nonstick cooking spray, ensuring complete surface coverage.
  2. Fill a large pot with 3 quarts (2.8 liters) of water and add of kosher salt. Bring to a vigorous boil, then add of ziti pasta. Cook for 6-7 minutes until pasta is slightly firmer than al dente. Drain in a colander and drizzle with olive oil, gently tossing to prevent sticking.
  3. Heat a large skillet over medium-high heat. Crumble of Italian sausage and cook until thoroughly browned, approximately 5-6 minutes. Drain excess fat from the pan.
  4. Reduce heat to medium and add 5 minced garlic cloves. Sauté for 1 minute until aromatic. Incorporate of dried oregano, of dried basil, of kosher salt, and of black pepper. Stir briefly before adding tomato sauce and diced tomatoes.
  5. Lower the heat and let the sauce simmer for 10 minutes, stirring occasionally to prevent scorching. Mix in of sugar and of freshly chopped basil.
  6. In the same pot used for pasta, whisk of heavy cream with of cornstarch. Heat over medium, stirring constantly until slightly thickened, about 3-4 minutes.
  7. In a separate mixing bowl, whisk 2 eggs thoroughly. Fold in of cottage cheese, of grated Parmesan cheese, and cubed mozzarella cheese.
  8. Remove cream mixture from heat and combine with the cheese mixture, sausage sauce, and drained pasta. Stir until ingredients are evenly distributed.
  9. Transfer the mixture to the prepared baking dish. Spread remaining red sauce over the top and sprinkle additional mozzarella and Parmesan cheese evenly.
  10. Cover the dish with foil (sprayed on the underside to prevent sticking) and bake for 25 minutes. Remove foil and continue baking for an additional 15-20 minutes until the top is golden and bubbling.
