Description

Mallorcan bread buns weave together sweet guava and creamy cheese in a delightful pastry. Local ingredients and traditional techniques create a memorable island-inspired treat you will savor with each delectable bite.

Ingredients

Scale
  • 3 cups + 3 tbsps (375g) unbleached all-purpose flour
  • 1 cup (163g) bread flour
  • 2 eggs (organic, room temperature)
  • 2 egg yolks (room temperature)
  • ¾ cup (173g) buttermilk or full-fat milk (organic, room temperature)
  • 4 oz (114g) cream cheese (softened)
  • 8 tbsps (113.5g) + 4 tbsps (57g) salted butter (organic European style, cubed and softened)
  • 3 tbsps (about 36g) extra butter (for brushing)
  • ½ cup (100g) + 4 tbsps (50g) natural granulated sugar
  • 1 ½ tsps (8g) fine sea salt
  • 1 packet (11g, 3 ½ tsps) instant yeast
  • 12 to 14 oz guava paste (cut into small chunks)
  • ½ cup (118g) + 2 tbsps water (for icing)
  • 1 cup (120g) confectioner’s sugar

Instructions

  1. Prepare Starter: Create a smooth, pudding-like flour mixture by heating water with flour in the microwave for 15 seconds, stirring until consistent, then cool completely.
  2. Mix Wet Ingredients: Combine eggs, egg yolks, buttermilk, sugar, yeast, and cooled flour-water mixture in a stand mixer with paddle attachment, blending thoroughly on medium speed.
  3. Develop Dough: Gradually add flour using the lowest mixer setting, switch to dough hook, and knead until the texture becomes uniform and silky. Incorporate softened butter, continuing to knead at medium speed for 20 minutes until fully integrated and elastic.
  4. First Rise: Transfer dough to an oil-coated bowl, cover, and let rise in a warm environment for 1½ hours until doubled in volume.
  5. Prepare Fillings: Simultaneously create guava paste by gently cooking with water until smooth, then blend in butter and cool. Prepare cream cheese mixture by blending with sugar until smooth and consistent.
  6. Shape and Fill: Preheat oven to 400°F (204°C), then reduce to 350°F (177°C). Roll out risen dough, spread guava paste evenly, fold, and cut into strips. Shape each strip into a roll, generously filling with cream cheese mixture.
  7. Second Rise and Bake: Allow buns to rise for 20-30 minutes. Bake for 12-17 minutes until golden-brown.
  8. Finish and Glaze: Brush warm Mallorca buns with melted butter. Create a light glaze by mixing powdered sugar, water, and butter, then drizzle elegantly over warm buns.

Notes

  • Flour Paste Technique: Creating a pudding-like flour mixture helps develop a smoother, more elastic dough texture by pre-gelatinizing starches and improving moisture absorption.
  • Kneading Duration Matters: Extended 20-minute kneading with butter develops gluten strands, ensuring a soft, silky bread with superior texture and consistent crumb.
  • Temperature Control Critical: Precise oven temperature shifting from 400°F to 350°F prevents burning while allowing even, golden-brown baking of delicate Mallorca buns.
  • Second Rise Importance: Allowing buns a brief 20-30 minute second rise before baking ensures lighter, airier texture and enhanced flavor development.
