  • 2 cups (480 ml) ricotta cheese
  • 1 cup (240 ml) Parmesan cheese, grated
  • 12 lasagna noodles, cooked
  • 10 oz (280 g) fresh spinach
  • 8 oz (225 g) mushrooms, sliced
  • 3 cups (720 ml) Alfredo sauce
  • 2 tbsps olive oil
  • 1 clove garlic, minced
  • Salt, to taste
  • Pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Vegetable Preparation: Heat olive oil in a large skillet over medium heat, sauté minced garlic until fragrant. Add sliced mushrooms and cook until tender, then incorporate spinach leaves, stirring until wilted. Season with salt and pepper, then set aside.
  2. Oven Preparation: Preheat oven to 375°F (190°C) and grease a 9 x 13 inch baking dish with cooking spray or butter. Spread a thin layer of Alfredo sauce on the bottom.
  3. First Layering Phase: Arrange lasagna noodles to completely cover the sauce. Distribute half the vegetable mixture evenly, then add dollops of ricotta cheese and sprinkle mozzarella and Parmesan generously.
  4. Second Layering Phase: Repeat the layering process with remaining noodles, vegetable mixture, ricotta, and cheeses. Top with remaining Alfredo sauce and a thick layer of mozzarella cheese.
