Description

Delicate rose sorbet whispers romantic French elegance through refreshing, floral notes. Silky smooth and cooling, this sophisticated dessert invites you to savor summer’s most graceful culinary moment.

Ingredients

Scale

Main Ingredients:

  • 225 grams (8 ounces) caster sugar
  • 16 grams (0.6 ounces) dried rose petals
  • 6 tablespoons rosewater

Acidic Ingredients:

  • Juice of 1 lemon

Stabilizing Ingredients:

  • 1 tablespoon glycerine

Instructions

  1. Gently heat water and caster sugar (100 grams or ) in a saucepan, stirring until sugar completely dissolves over low temperature.
  2. Add fresh, fragrant rose petals to the warm syrup, allowing them to gently wilt and release their delicate essence for 2-3 minutes, then carefully remove the pan from heat.
  3. Incorporate additional cold water, premium rosewater (30 milliliters or 1 fluid ounce), and pure glycerine, then allow the infused mixture to cool naturally for approximately 30 minutes at room temperature.
  4. Squeeze fresh lemon juice (15 milliliters or 0.5 fluid ounces) into the rose-infused liquid, enabling the petals to macerate and slowly transform the syrup into a soft pink hue.
  5. Carefully strain the liquid through a fine-mesh sieve, pressing gently to extract maximum flavor, and discard the spent rose petals.
  6. Pour the strained rose syrup into an ice cream maker and churn according to manufacturer’s instructions until the mixture reaches a smooth, slushy consistency.
  7. If an ice cream maker is unavailable, transfer the liquid to a freezer-safe container and whisk vigorously every 30 minutes to prevent large ice crystals from forming.
  8. Once the sorbet reaches a firm yet scoopable texture, transfer to a sealed container and freeze for a minimum of 4 hours before serving.

Notes

  • Rose petals infuse delicate floral essence, transforming ordinary water into a fragrant syrup.
  • Glycerine helps create a smoother, less icy texture that melts softly on the tongue.
  • Lemon juice balances sweetness while helping preserve the vibrant pink color of the sorbet.
  • Periodic whisking prevents large ice crystals, ensuring a silky, elegant dessert experience.
  • Freezing allows flavors to meld and develop a rich, concentrated rose profile.
