Description

Tropical Mango Delight brings Caribbean sunshine to your dessert plate with a refreshing blend of ripe mangoes, creamy coconut, and delicate rum-infused whipped cream. Guests will savor each spoonful of this exotic treat that whisks palates to a breezy island paradise.

Ingredients

Scale

Main Ingredients:

  • 12 ounces (340 grams) mangos: Fully ripened and tender
  • 1 ½ tablespoons (22.5 milliliters) white granulated sugar
  • 1 ½ tablespoons (22.5 milliliters) gelatin: Or 1 ½ teaspoons (7.5 milliliters) agar agar powder for a vegan version
  • ½ cup (120 milliliters) coconut milk: Full-fat, or substitute with evaporated milk, heavy cream, or evaporated coconut milk

Liquid Ingredients:

  • 2 tablespoons (30 milliliters) cold water
  • 4 tablespoons (60 milliliters) evaporated milk: Or substitute with coconut milk for a vegan version

Instructions

  1. Carefully extract the flesh from ripe mangoes by peeling, removing the central pit, and dicing the fruit into small, uniform cubes.
  2. Transform the diced mango pieces into a silky, vibrant puree using a high-powered blender, creating a smooth consistency. Optional: strain the puree through a fine-mesh sieve to eliminate any fibrous texture.
  3. In a spacious mixing bowl, sprinkle gelatin powder over cold water (60 milliliters or ), allowing the mixture to thicken and bloom for approximately 2-3 minutes.
  4. Gradually incorporate granulated sugar, creamy coconut milk, and the prepared mango puree into the gelatin mixture, whisking continuously until a homogeneous, lump-free liquid is achieved.
  5. Transfer the combined mixture to a saucepan, gently warming over medium-low heat. Stir constantly to ensure complete gelatin dissolution without reaching a boiling point, which could compromise the gelatin’s setting properties.
  6. Carefully pour the smooth liquid into individual serving bowls or decorative molds, tapping gently to release any trapped air bubbles and create a pristine surface.
  7. Place the filled containers in the refrigerator, allowing them to set undisturbed for a minimum of 6 hours or preferably overnight, until the dessert achieves a firm, wobbly consistency.

Notes

  • Gelatin needs time to bloom and absorb liquid, creating that signature smooth texture.
  • Straining mango puree ensures a silky-smooth dessert without fibrous bits.
  • Fresh, ripe mangos deliver the most vibrant tropical flavor and natural sweetness.
  • Coconut milk adds creamy richness and enhances the exotic island-inspired profile.
  • Chilling allows the dessert to set completely, developing deeper, more intense flavors.
