Lemon-Basil Grilled Chicken
1/4 cup
lemon juice
2 tablespoons vegetable oil
1/4
cup chopped fresh basil leaves
3 tablespoons grated parmesan
cheese
2 garlic cloves - finely chopped
salt
and pepper
1 pound skinless boneless chicken breast halves
Prepare charcoal or gas grill or preheat broiler. In small bowl, combine lemon
juice, oil, basil, Parmesan, garlic and pepper; mix well. Reserve 1/4 cup.
In shallow dish or plastic bag, pour remaining marinade over
chicken. Cover; marinate in refrigerator 30 minutes to 1 hour. Remove chicken
from marinade.
Over medium-hot coals, grill or broil until tender, basting
frequently with reserved marinade.
Makes 4 servings.
