Blackened Chicken

1/2 teaspoon paprika

1/8 teaspoon salt

1/4 teaspoon cayenne pepper

1/4 teaspoon ground cumin

1/8 teaspoon dried thyme

1/8 teaspoon pepper

1/8 teaspoon onion powder

2 boneless chicken breasts

cooking spray

Mix together all the spices. Coat chicken breasts with cooking spray, and then sprinkle one side with spice mixture. Heat a cast iron skillet over high heat until it is very hot.

Place chicken in hot pan, seasoned side down, and cook for 2 minutes. Turn, and cook 2 minutes on other side. Place breasts on baking sheet coated with cooking spray.

Bake at 350* for 10 minutes or until done.
