Serve this pie with some
sweetened whip cream or vanilla ice cream while it is still warm.
Sweet Potato Pie
1 1/2 lbs. sweet potatoes
4 T. melted butter
1/2 C. brown sugar
1/2 C. sugar
1/3 C. honey
2 well beaten eggs
1/2 t. ginger
1/4 t. nutmeg
1/2 t. ground cloves
1/2 t. cinnamon
1 C. cream or evaporated milk
1 unbaked 9 inch pie crust
Wash the sweet potatoes and put tem in a pan covered with water. Bring to a boil
and reduce heat to medium. Cook until potatoes are soft, about 45 minutes.
Drain, cool and peel potatoes.
Mash the sweet potatoes with the sugars, honey and butter. Mix very well. Add in
the eggs and spices. Blend well. Stir in milk or cream and blend well.
Pour into the crust and bake for 10 minutes at 400° F. Reduce temperature to
350° F. and bake for about 30 minutes or until the center is firm.
Optional: Sprinkle 1 C. pecans on top of the filling before baking. Some may
sink in but that's okay.
