Preheat
oven to 350°F. Mix meats. Combine with eggs, milk and oats. Set aside. Saute
onions in oil over low heat until translucent and golden. Add the garlic and
cook for 2 minutes. Cool and mix with the meat. Add the parsley, salt, cumin and
pepper.
In a 9 x 13 baking dish, shape 2/3 of meat mixture into a hollow shell.
Mix the filling ingredients together and fill the cavity of the meat loaf. Cover
the filling with the remaining meat mixture. Combine topping ingredients and
spread on top of meatloaf.
Bake for 70 - 80 minutes. |

Greek Meat Loaf
1 1/2 lbs. ground beef
1 1/2 lbs. ground lamb
2 eggs
1/4 C. milk
2 C. quick oats
2 T. oil
1 large onion minced
2 - 3 garlic cloves minced
1 C. fresh minced parsley
2 t. salt
1 t. cumin
1/8 t. pepper
Filling:
2 (10 oz.) boxes frozen spinach drained and chopped
1 egg
1 1/2 C. feta cheese
1/4 C. black Greek olives coarsely chopped
Topping:
1/2 C. ketchup
3 T. parmesan cheese
