Roughly mash the potatoes in this
salad. Leave some smaller pieces. |

Mashed Potato Salad
6 medium potatoes
6 eggs
1 medium white onion diced
2 to 3 large sweet pickles
1/2 C. diced celery
1 C. mayonnaise
1 T. prepared mustard
1/2 t. salt
1/3 C. liquid from sweet pickles
salt and pepper to taste
Peel and boil potatoes. Hard boil eggs. Dice onion, celery and pickles. Roughly
chop the hard boiled eggs. Reserve 1 egg for garnish.
Mash potatoes while hot and add diced hard boiled eggs, onions, celery, salt and
pepper. Mix mayonnaise, mustard and pickle juice in separate bowl (be sure this
mixture is quite thin). Pour over hot potato mixture and stir. Garnish with cut
up egg and paprika. Chill.
