Chinese Shrimp Pizza With Hoisin Sauce
1 C. small to medium shrimp, peeled
2 T. olive oil, divided
1 recipe pizza dough
1/4 C. prepared hoisin sauce
4 green onions, finely sliced
2/3 C. chopped cilantro
1/2 red bell pepper, sliced into thin strips
1 C. grated mozzarella cheese
salt and freshly ground black pepper
Thread shrimp on metal skewers and brush with 1 tablespoon olive oil; grill over
direct heat just until pink, about 4 minutes, turning once. Cool slightly and
remove shrimp from skewers; set aside. Roll out each of 4 dough balls into 8- to
9-inch rounds. Brush both sides of crusts with remaining olive oil; grill over
direct heat until bottoms are well marked and browned.
Remove crusts from grill and set out, grilled side up. Spread crusts with hoisin
sauce, shrimp, green onions, cilantro, bell pepper and cheese, dividing toppings
evenly. Grill over indirect heat until bottom is browned, toppings are warm and
cheese is bubbly, 7 to 10 minutes. Serve warm, cut into wedges.
Makes 4 servings.
Note: You can also bake this pizza at 450°F. for 10 - 12 minutes, or until crust
is browned.
